The Lobster Course

Here’s one of the many facts you’ll learn in The Lobster Course (coming in 2013). For every 50,000 eggs, only two lobsters are expected to survive to legal size. That’s why sustainability

programs are so vital to preserve seafood for generations to come. We appreciate the fragile relationship between global populations and the environment. We work with suppliers who practice responsible sustainability on land and sea. Too many cases have been recorded of over fished stock, extinct species & lost heritage produce. Our goal is to support programs that put one juvenile lobster back into the ocean for every adult lobster taken. We plan to enroll our guests into such a charter program set to launch in 2013.
